Phases of peaches















Canning. It's so much more work than I remember. I like the idea of having fresh from the farm to my home yummy goods in my pantry. What I don't like? Peeling and pitting a million pounds (seems like it) of peaches. Perhaps it wouldn't feel so daunting if the phone would stop ringing, if the cat wouldn't need my attention, the bike chain wouldn't need to be fixed, or the non-stop parade of children needing to show me the latest garden safari capture goes on at the same time. Phases. This is done all in phases. Washing, drying, blanching, drying, pitting, peeling, slicing. I pit and peel as many as I can and set them aside until the whole lot is finished.
