Days of fall: Acorn squash pasta

This is by far my most beloved vegetarian recipes. I love this creamy, sweet, nutty, garlicky dish. I am the only one in the house that finds it delicious. My husband will tolerate it so long as there is some sort of meat to go along with it. And actually it does go quite well with a nice grilled chicken breast or even roasted chicken. Yet for me I am happy to eat it as it is made. Every fall I look forward to the acorn squash harvest and make this several times throughout the winter. Though I have been known to make it in the summer. This dish takes very little time to make and can be done in under an hour. The longest part is the roasting of the squash, but often that goes quickly, depending on the size of the squash. If you would like the recipe please leave a comment. Yes, please! I am the only one in my house that will eat squash, but maybe if I sneak it in with pasta Frank will try it!
