Crock Pot Applesauce

I made some applesauce yesterday and it was fantastic. We have had every intention to eat those apples in the fruit bowl but it just didn't happen. It may have to do with all that Halloween candy laying around. With a fruit bowl full of apples and no one eating them fast enough it was applesauce for them apples. I could not toss out anymore food that we should have been eating. The squirrels will be without a treat this time. I found a good recipe for applesauce but it involved actual work and standing around a pot on the stove. Not for me this week. It had to be simple. I figured why not use the crock pot? I found the basic recipe in my Quick Crockery Cooking book by Cyndi Duncan and Georgia Patrick. By the way if you would like a good crock pot cook book this a good one have, it has great dishes, and the recipes are super easy. They have a recipe for chunky applesauce in the sides section. Being the sort of cook I am I amended it to my taste and applesauce without chunks was the result.

Crock Pot Applesauce
Serves 8

1/2 cup water
4 cups apples, cored, peeled, cut into chunks/slices (I used red delicious, braeburn and gala)
1/2 cup sugar (more if using tart apples, I needed only 1/2 cup as the apples I used were sweet)
1 teaspoon cinnamon
2 dashes nutmeg
1/4 teaspoon vanilla powder (not required but a nice touch)


Place apples in the crock pot, add the water and sprinkle sugar on top. Sprinkle cinnamon, nutmeg and vanilla powder. Cover and cook on low overnight, or for 8-10 hours. Every few hours give the mixture a good stir to help incorporate the sugar and spices. The applesauce is ready when the mixture takes on a golden brown color. Use an immersion blender to break up the chunks. I doubled the recipe and ended up with a little over 36 ounces.

This applesauce tastes wonderful warm, what a great treat on a cold night, and it makes your house smell delightful. I added some warm applesauce to some plain oatmeal this morning and that was so good. I plan on having it as a side with tomorrow' s meal. That is, of course, if I do not eat it all today.

Ooh...I'm going to try this one asap. I'm not familiar with vanilla powder though. Please share your source under separate cover. :-).
